香醋椰棗糖浆烤鸡 Balsamic Vinegar Dates Syrup Roast Chicken


I came across this simple and fuss free chicken recipe from this blog and adapted according to the available ingredients at home.
我从这博客里见到这项简易而看起来又美味的烧鸡食谱后便立刻从冰箱取出鸡肉,然后再从家里仅有的材料中加以修改成自己的版本。

The chicken turned out succulent and juicy from the marinating seasonings. It is relatively easy to make with minimal preparation time.
很高兴烤出来的鸡肉香甜多汁,把腌泡汁完全地吸收非常的好吃。制做过程及简易而无须用上太多的准备时间。


香醋椰棗糖浆烤鸡
Balsamic Vinegar Dates Syrup Roast Chicken


Ingredients 材料
(A)
750g Chicken 鸡 (cut to chunks 切块)

(B)
1/2 Cup Dates Syrup / Honey 椰枣或蜜糖
4 Tbsp Light Soy Sauce 酱清
2 Tbsp Shao Wine 绍兴花雕酒
2 Tbsp Balsamic Vinegar 香醋
2 Tbsp Brown Sugar 红糖
1/4 Tsp Red Chilli Powder 辣椒粉
5 Cloves Garlic 蒜米 (chopped 切碎)

(C)
Toasted Sesame Seeds 香烤zhi ma


Method 做法


Wash and cut chicken into chunks. Pat dry with kitchen towels and place chicken into mixing bowl.
鸡肉洗净切块。用厨房纸巾擦干后置入盆中。

Combine all ingredients (B) into the chicken and allow to coat evenly. Cover and refrigerate for 3 hours.
把调味料B一起混入鸡肉块,混匀。盖上后置入冰箱冷藏三个小时以上即可。

Preheat oven to 160C degrees.
烤箱预热至160C度。

Line baking tray with aluminum foil and place the grilling rack over the lines baking tray.
烤盘铺上一层锡纸,另把铁架/烤架放置在烤盘上。


Arrange the chicken pieces onto the grilling rack and send it back to the preheat oven. Bake the chicken for 30 mins.
把鸡肉块排放在烤架上,一起将烤盘,烤架送入烤箱烘烤30分钟。

Transfer the reserved marinade sauce into a saucepan and cook under medium heat until the sauce thickens.
把腌泡汁倒入锅里,用中小火焖煮至浓稠即可离火。

Remove chicken from oven and spread a coat of the thickened sauce over the chicken. Transfer the chicken back into the oven and roast for a further 10 mins.
当鸡肉从烤箱取出后,立刻在鸡肉块的表层刷上一层浓稠腌泡汁,又再转送入烤箱继续烘烤10分钟即可。

Pour the leftover sauce and sprinkle sesame seed sover the roasted chicken. Serve.
鸡肉出炉后可以将剩余的腌泡汁及芝麻粒在鸡肉上即可品尝。

美味香烤可乐鸡 Baked Coca Cola Chicken



I used to be a huge fan of coca cola carbonated drinks during teenage days. But now, being in my late forties I steer away from consuming it no matter how tempted I was after drenching in sweat from staying out under the hot sun.
我在童年时期超级爱饮可乐汽水,如今已步入中年为了照顾身体而疏远这类饮品,就算是在太阳底下爆嗮而汗流浃背都会忍着不去动它。


Today I am trying out this recipe adapted from Center Cut Cook which yields extremely good results. The chicken came out juicy and tender while the rich sauce further enhance the satisfaction. This recipe is sure a keeper.
今天尝试了Center Cut Cook网上的这道可乐烤鸡食谱,效果非常满意。烤出来的鸡肉香嫩即多汁,再配上那浓香的烹调酱更加可口。这的确是道值得收藏的好食谱。



美味香烤可乐鸡
Baked Coca Cola Chicken
Recipe adapted from here

Ingredients 材料
(A)
1.2kg Chicken Thighs 鸡腿肉
1 Tbsp Shaoxing Wine 绍兴花雕酒
1 Tsp Salt 盐
1 Tbsp Soy Sauce 酱清

(B)
3 Medium Potatoes 马铃薯 (中)(cut to bite size 切块)
1 Tbsp Cooking Oil 食油

(C)
500ml Coca Cola 可口可乐汽水
1/2 Cup White White 白葡萄酒
1/4 Cup Soy Sauce 酱清
2 Tbsp Dark Soy Sauce 黑酱油
2 Tbsp Distilled White Vinegar 白醋
2 Tbsp Sugar 砂糖
6 Cloves Garlic 蒜瓣 (smashed 打碎)
2 Inch Ginger 姜 (smashed 打碎)

(D)
1-2 Tsp Cinnamon Powder 桂花粉
3 Tbsp Corn Flour 玉米粉
1/4 Cup Water 清水
Salt to Taste 盐


Method 做法


Combine (A) into a bowl until mix. Refrigerate overnight to marinate.
把材料A一起混入碗,混匀后送入冰箱隔夜让调味料吸收。

Heat up cooking oil (B) and add potatoes in a skillet. Cover and cook for 5-6 minutes until partial cook. Remove and set aside.
材料B的食油倒入煎锅烧热,把马铃薯块放入拌炒5-6分钟至6分熟即可离火搁置备用。

Arrange chicken pieces (without overlapping) and potatoes into a greased oven proof casserole dish. Sprinkle cinnamon powder (D) over the top. Set aside.
将鸡肉块,马铃薯摆入已涂上食油的耐热砂锅(不要重叠), 然后撒上桂花粉,搁置。

Combine ingredients (C) mixture into a saucepan and cook under medium heat until simmer for 5 mins.
把材料C酱料一起混入锅以中火烧热至沸腾五分钟后离火。

Pour the simmering mixture into the chicken lined casserole dish. Bake in a preheated oven at 160C degrees for 30 mins.
然后再把沸腾的酱料C倒入鸡肉砂锅里,转送入已预热至160C度的烤箱烘烤30分钟。


Flip the chicken pieces over and continue to bake for another 30 mins.
取出砂锅,把鸡肉块翻过来又继续送入烤箱烘烤30分钟。

Remove casserole dish from oven and scoop up the chicken and potatoes onto a plate.
把砂锅从烤箱取出,取出鸡肉和马铃薯块暂置入另一个盘上。

Dissolve (D) corn flour with 1/4 cup water into a small bowl.
将D的玉米粉料及1/4碗清水混匀。

Strain the coca cola mixture into a saucepan and discard the ginger and garlic. Cook and stir over medium heat. Add corn starch mixture to thicken the sauce. Add salt to taste.  Set aside for later use.
把砂锅的可乐酱汁过沥置入另一个煮锅,取出姜和蒜碎。接着用中小火把可乐酱汁煮热,拌入玉米淀粉汁一边煮一边搅拌至酱汁变浓稠即可加入盐调味。搁置代用。

Place the chicken ad potatoes back into the casserole dish and back into the oven and bake for a further 5-10 mins until the skin crisps.
又再把取出的鸡肉和马铃薯块排入砂锅,送入烤箱烘烤5-10分钟至鸡肉表皮稍微变脆即可。

Pour the thicken sauce over the the chicken and serve warm.
把浓稠的可乐酱汁倒在鸡肉上即可品尝。

香辣烧烤鸡 Spicy Grilled Chicken

香辣烧烤鸡
Spicy Grilled Chicken

Ingredients 材料
(A)
500g Chicken Drumsticks 鸡腿
1/2 Tbsp Soy Sauce 酱清
1 Tbsp Shaoxing Wine 绍兴花彫酒

(B)
5  Green Chillies 青辣椒
20g Shallots 小葱头
3 Garlic Pips 蒜头瓣
15g Ginger 姜
10g Tumeric 黄姜
10g Galangal 南姜
50ml Water 清水
200ml Coconut Milk 浓椰浆


(C)
1/2 Tbsp Sugar 砂糖
3 Slices Kaffir Lime Leaves 疯柑叶
1 Tsp Salt 盐
1/2 Tbsp Lime Juice 酸柑汁


Method 做法


Combine all ingredients (A) into a bowl until mixed. Refrigerate and season for 1-2 hours.
把所有材料A一起混入碗中,放入冰箱1-2小时待入味。

Combine all ingredients (B) into the food processor and blend into paste. Transfer into a saucepan and bring to boil over low flame. Add chicken and (C) into the mixture and continue to simmer over low heat for 20 mins.
把所有材料B一起混入食物搅拌器搅烂成糊,再转送入煮锅以小火煮沸。加鸡腿和C拌料继续以小火焖煮约20分钟。

Remove chicken from the saucepan and place on baking tray. Reserve the paste mixture for later.
取出鸡腿放入烤盘,剩下的酱汁保留备用。

Bake the spiced chicken into the oven or air fryer with 180C degrees for 15 mins.
用烤炉或者空气炸锅以180C度烧烤15分钟即可。


Serve chicken with remaining sauce.
剩下的酱汁可以用来配鸡肉吃。

虾酱炸鸡 Shrimp Paste Chicken


If you love fried chicken but worry about the fats, here is one healthier and yet yummy version using air fryer.
您若是爱吃炸鸡但又担心油炸的高脂肪,这是一项采用汽炸锅的健康版本。味道并不输于传统油炸的炸鸡,炸出来的效果一样酥脆,里面软嫩。

Ever since we acquired an air fryer 2 years ago, I have assigned the reliable appliance to perform most of the deep frying cooking. I have no tried it for baking though hence can't comment much on the performance in terms of baking. Perhaps will give it a try one day and revert on my findings.
自从我们两年前购买了汽炸锅后,家里大部分的油炸式的烹饪工作都是交托给那架可靠的汽炸锅来取代。对于蛋糕及糕点的制做方面我还没正式去尝试,不能给予任何意见。或许将会试一试后才跟您分享结果。


虾酱炸鸡
Shrimp Paste Chicken

Ingredients 材料
(A)
1/2 Chicken 半只鸡

(B)
2-3 Tbsp Shrimp Paste 虾酱
2 Tsp Sugar 砂糖
2 Tsp Sesame Oil 麻油
3 Tsp Ginger Juice 姜汁
1 Tbsp Soy Sauce 酱清
1 Tbsp Shoaxing Wine 绍兴花雕酒

(C)
Corn Flour 玉米粉
4 Tbsp Cooking Oil 食油

(D)
Air Fryer 汽炸锅


Directions 做法


Wash and chop chicken (A) into chunks.
鸡肉A洗净切块。

Grate some ginger to squeeze out the required amount of juice. Retain the pulp.
把姜刨丝挤出足够的姜汁,挤干的姜丝和姜汁保留待用。

Combine ingredients (B) and the ginger pulp into a bowl and mix until a paste is formed. Toss in chicken and marinate evenly. Cover and refrigerate overnight.
将所有材料B及姜丝一起混入碗里,搅匀成糊便把鸡肉块拌入,把酱料完全混入鸡肉块。再用保鲜纸盖上,放入冰箱隔夜。


Preheat air fryer at 180C degrees for 5 mins.
汽炸锅预热5分钟至180C度。

Coat the chicken pieces evenly with corn flour. Lightly brush the cooking oil over the chicken. Alternatively you may use cooking spray to spray over the chicken prior to air frying.
鸡肉块均匀的盖上玉米粉沾裹,接着又在表面涂抹上食油。您也可选择采用喷雾式的食油。


Arrange one layer of chicken pieces into the air fryer basket. Air fry the chicken for 10 mins then turn the chicken pieces over and continue to air fry for another 7-8 mins until it turn golden brown.
铺入一层鸡肉块入汽炸锅的网篮里,烧烤10分钟后又把鸡肉翻面继续烧烤7-8分钟至熟透及表皮酥脆即可。

地瓜鸡肉饭 Sweet Potatoes Chicken Rice


Sweet potatoes are an excellent source of beta-carotene, vitamin C and a list of many other health supporting properties. Even my three fur babies consume it daily in replacement of other forms of starch. 
地瓜除了富有萝卜素与维生素C之外,还包含了许多有益健康的营养份量。就连家中的三只宝贝爱犬都是以地瓜来取代淀粉。

Besides baking, sweet potatoes are also widely used in cooking with wonderful results. This is one simple recipe I randomly devise and it turns out very well. 
除了用于烘焙上,地瓜也广泛使用于做饭而得到良好的效果。今天这道地瓜鸡肉饭也是随意制做而成的。


地瓜鸡肉饭
Sweet Potatoes Chicken Rice

Ingredients 材料
(A)
2 Cups Long Grain Rice 白米
2 Cups Brown Rice 健康糙米
250g Chicken Breast 鸡胸肉
300g Sweet Potatoes 地瓜
130g Red Paprika 红辣椒
70g Green Peas 青豆

(B)
1 Tsp Light Soy Sauce 酱清
1 Tsp Worcestershire Sauce 伍斯特酱
1/2 Tbsp Oyster Sauce 蚝油
1 Tbsp White Wine 白葡萄酒
Pepper 胡椒粉少许

(C)
2 Tbsp Cooking Oil 食油
1 Tbsp Sesame Oil 芝麻油
1 Tsp Garlic 蒜米 (minced搅碎)
1 Tbsp Oyster Sauce 蚝油
1 Tsp Chicken Stock 鸡精素
1 Tsp Sea Salt 海盐
1 Tbsp White Wine 白葡萄酒
1 Tbsp Light Soy Sauce 酱清
1 Tbsp Dark Soy Sauce 黑酱油
Pepper 胡椒粉少许
4 Cups Water 清水


Method 制做方法


Combine both rice (A) together and soak for 4 hours. Drain. Set aside.
把材料A的两种米粮混合,泡浸四小时后沥干。搁置备用。

Cut chicken into cubes. Season with (B) until mixed. Referigerate until ready to use.
鸡肉切丁,混入所有材料B的酱料调味。冷藏待用。

Wash sweet potatoes and paprika (A). Dice and set aside.
材料A的地瓜和红辣椒洗净,切丁后搁置备用。


Heat up cooking oil and sesame oil in wok. Saute garlic on low heat until fragrant.
烧热炒锅,把材料C里的两种食油加热,又加蒜米以小火爆香。

Add sweet potatoes (A) and stir fry for a minute. Add oyster sauce and continue stir frying for 2 mins until mixed.
把地瓜A倒入炒锅继续翻炒1分钟,再加蚝油翻炒两分钟至炒匀。

Add green peas (A) and chicken. Continue stir frying for 2 minutes until the chicken is slightly cook. Add salt and chicken stock (C). Continue stir frying for a minute before adding the soaked rice (A). Add 1 cup of water (C) and continue to stir fry the mixture for 2 minutes.
再把材料A的青豆和鸡肉块倒入炒锅,拌炒两分钟至鸡肉半熟。加盐和鸡精素C继续拌炒一分钟后便拌入泡浸A的两种米粮。再加一杯清水C,继续拌炒两分钟。


Add light soy sauce and dark soy sauce. Keep Stir frying for another 2 minutes until the water slightly dries up. Add paprika cubes (A), white wine (C) and pepper (C) and continue stir frying for a minute to combine.
接着加入酱清及黑酱油,再拌炒两分钟让水份吸收。加红辣椒丁A,白葡萄酒C和胡椒粉C炒匀。

Transfer mixture into rice cooker. Mix the remaining water into the rice mixture and allow the rice cooker to boil the rice until ready.
把拌炒好的一切材料转送入电饭锅,将剩余的3杯清水倒入,让电饭锅把米饭及配料一起煮熟即可。

麻辣咖喱鸡 Spicy Kapitan Chicken


To accommodate for the maids and gardener, we occasionally cook 2 too 3 meat dishes throughout the week. The meat dishes are either chicken or prawns as red meat is not favored by most of them. 
尽管家中所煮的食物偏向多素少肉,但是为了配合女佣和园丁们家里每一个星期里都会煮2至3道的肉类给予他们。由于他们不爱吃红肉,一般上都是以鸡或虾为主。


Although fish seems to be another good alternative but somehow my hubby could never tolerate the fishy aftertaste of the fish bought in Jakarta.We have tried many ways to cut down the fishiness through numerous cooking methods with little success. Since then we have banned the cooking of fish at home with the exception of canned tuna and anchovies.
虽然鱼会是一项较健康的选择,坏在丈夫不能接受之前印尼所购买的鱼类,不管怎么调味,用尽多种的煮法都不能去掉浓厚的鱼腥味。之后家里除了罐头金枪鱼及江鱼仔外就不再买任何的鱼类来煮了。

This is an adapted version with reduced spiciness for my hubby. Feel free to adjust the chili paste to your preference.
这是特别煮给丈夫的‘减辣’版本咖喱鸡。您若偏爱吃辣可以增加辣椒酱的份量。


麻辣咖喱鸡
Spicy Kapitan Chicken

Ingredients 材料
(A)
500g Chicken Pieces 鸡肉块
250g Potatoes 马铃薯 (cut to bite size 切块)
4 Cloves Shallot 小葱 (finely sliced 切丝)
1 Tbsp Corn Oil 玉米油
2 Tsp Chilli Paste 辣椒酱

(B)
1 Bulb Shallots 小葱一粒
4 Cloves Garlic 蒜头4片
2 Cm Fresh Ginger 鲜姜
2 Cm Fresh Tumeric 南疆
2 Stalks Lemon Grass 香茅
1 Tsp Belacan 马来栈粉
3 Dry Red Chili 红辣椒干

(C)
200ml Coconut Cream 浓椰浆
400ml Water 清水 
2 Tsp Salt 盐
1 Tsp Sugar 砂糖
2 Tsp Dark Soy Sauce 黑酱油
1 Tbsp Tomato Ketchup 番茄酱
1 Tbsp Lime Juice 柠檬汁
2 Kaffir Lime Leaves 青柠叶 

(D)
1 Tsp Oyster Sauce 蚝油
2 Tsp Soy Sauce 酱清
Pepper 胡椒粉少许


Method 做法


Combine all ingredients (B) into a blender and grind into paste. Set aside.
把材料B混入食物搅拌器,搅碎成泥后搁置备用。

Cut chicken to bite size. Marinate with (D) for 2 hours before cooking.
鸡肉切块,把所有的酱料D混入,混匀搁置2小时后才采用。

Boil potatoes in a saucepan with hot water for 10 mins until tender. Dish up.
马铃薯放入个已煮滚热水的锅内以中火煮10至七分熟,捞起待用。


Heat up 1 Tbsp Oil (A) in wok, add lime leaves (C), curry paste (B) and chili paste (A). Stir fry under medium heat for several minutes until fragrant and the paste volume slightly reduced.
将材料A的1汤匙玉米油加入炒锅烧热,然后加青柠叶C,之前搅碎的咖喱拌料B继续以中火翻炒数分钟,等到咖喱料出味即可。

Add shallots, chicken and potatoes (A). Continue stir frying for several minutes before adding 1/2 of the water (C) and mix until even. Simmer under medium low heat for 2 minutes.
这是便放入小葱头A,鸡肉块A及马铃薯A继续翻炒几分钟后才拌入1/2的清水C炒匀。再继续焖煮两分钟。


Season with (C) salt, sugar, water and coconut cream. Continue to stir fry for another minute before adding (C) ketchup, dark soy sauce and lime juice to taste. Cover and cook over low heat until chicken is cooked.
拌入材料C的盐,砂糖,剩余的1/2份清水和浓椰浆。又再翻炒一分钟,加入材料C里的番茄酱,黑酱油和柠檬汁调味。盖上锅盖用小火焖煮至鸡肉熟透为止。

Serve with rice or roti.
可以配拌饭或面包享用。
